We were chatting with @caitonaplate about always bringing the same old food on our trips, and she graciously agreed to put together some new, great tasting meals and snacks for our outdoor adventures. This is the first in our series together. Crispy Roasted ChickpeasAn excellent substitute for mixed nuts because it has a ton of protein and less calories.Ingredients:1 16 oz can Chickpeas rinsed and drained or 1-2 cups dried chickpeas, soaked overnight1/2 teaspoon smoked paprika or other spices of choicepinch salt and pepperPreheat oven to 400°F. Dry chickpeas between two paper towels for 30 minutes. Once dried, toss with salt, pepper, and desired seasonings. Place on parchment paper lined baking sheet in one layer and bake for 45 minutes to 1 hour or until chickpeas are golden brown and crunchy. Be sure to flip chickpeas over on the pan every 15 minutes to brown all sides. Remove from oven and let chickpeas completely cool before packing to keep them crisp.A huge thanks to @caitonaplate, she'll be making us lasagna soon — can't wait.
